The process of making Coria Gin starts with the fermentation and distillation of grapes into raw alcohol. To ensure purity, the grapes and alcohol are redistilled using a column distillation process. The double-distilled grapes alcohol is then macerated with a selection of botanicals, including juniper, coriander, lemon zest, dried lavender, star anise, licorice root, and others, for a minimum of 24 hours before being distilled for the final time. The resulting gin is then aerated for 1-2 days and optimally rested for 2 weeks before being bottled.
